They breathe faster and deeper because, they need to take in more air as they've used loads up whilst running so fast as they needed energy so they breathe faster took get the air faster and they breathe deeper to take it in more.

Breathe faster to get extra oxygen into bloodstream to break down the lactic acid that has built up
